An Allumette Hollandaise is not a sauce. Although it makes things taste more delicious. It's a Dutch Candle. Which is not a firework. It's one of the most important innovations in Bordeaux winemaking. And it came from Holland, a country that until very recently had no real winemaking tradition at all.
